recipes from the Jackson conference

I have finally found a moment to post these recipes from the conference. I won't be able to post everyone, but a few to get you going. We made a wonderful salad dressing, and pesto as well as some truffles. Please let me know if you try them, and how they came out. I welcome your comments!

Fudge Truffles
3/4 cup raw cacao powder
1/2 cup almond flour
1 cup pitted dates
1 cup pecan pieces, or walnut
1/3 cup raisins
14 cup alfalfa sprouts
2T purified water
2T unsweetened coconut (optional)
Use a food processor and create a date paste. Add a little water if needed. Add everything else accept 1/2 the raisins. Stir in the raisins. Process until sticky. Roll into balls and then roll into coconut or chopped almonds. This keeps them from sticking to each other and easier to eat.
This recipe can also be pressed into a 9 inch square dish and sprinkled with coconut. Then refrigerate for at least an hour.
Store in the refrigerator. (if they last that long)
