 OK, all you healthy eaters, it is time to plant. If you want affordable organic food just plant it yourself. Young plants and seeds are very affordable, and you control what is put on it or in the soil. Just one plant can produce enough for you to eat for the season. If you want to store up by canning, freezing or dehydrating, you need to plant more.  You can use raised beds, flower pots, or dig up the whole yard.  I know that gardening is hard work, but it comes with such amazing rewards!  In the next few weeks I will share the details of my garden. So far I am a bit late on some of my seeding, because wedding plans are keeping me busy.  I have 2 tomato plants, 2 basil plants, several peppers, and red cabbage. The Greek oregano. mint, and lavender are all well on their way. I have 2nd year blackberries that are full of leaves. I just planted them last year.  We have free range chickens with a movable coop, so I have bug eaters, and fertilizer.
Remember that when you purchase plants and seeds, make sure you get non-hybrid, open pollinated, organic seeds. You will be able to collect seeds from your produce and have seeds for next year and then some. So your initial investment may be a bit more, but ultimately it is a better payoff. I know you can do it, so give it a try!

Pesto

This can be used for a dressing if thinned, or put on vegies, put on sandwiches as a spread ,just  use your imagination.
1& 1/4 cups cashews (soaked at least 30 min.)
2 cloves garlic
1 &1/2 T lemon juice
1/4 cup sprouts (alfalfa or clover)
2 T pine nuts

Mix ingredients in a food processor and add filtered water and blend to desired consistency.

Poppy seed sweet onion salad dressing

Appliance needed
Blender

I use all organic ingredients.
1 med. white onion chunked
1/8 Cup olive oil
1/4 Cup pine nuts (or macadamia nuts)
1/4 cup agave or honey
2T raw apple cider vinegar
1/2 t Himalayan salt
1/2 poppy seeds
Pinch cracked black pepper to taste
Pinch garlic powder to taste

1.put all the ingredients in your blender and blend. Blend until emulsified.

recipes from the Jackson conference

I have finally found a moment to post these recipes from the conference. I won't be able to post everyone, but a few to get you going. We made a wonderful salad dressing, and pesto as well as some truffles. Please let me know if you try them, and how they came out. I welcome your comments!

Fudge Truffles
3/4 cup raw cacao powder
1/2 cup almond flour
1 cup pitted dates
1 cup pecan pieces, or walnut
1/3 cup raisins
14 cup alfalfa sprouts
2T purified water
2T unsweetened coconut (optional)
Use a food processor and create a date paste. Add a little water if needed. Add everything else accept 1/2 the raisins. Stir in the raisins. Process until sticky. Roll into balls and then roll into coconut or chopped almonds. This keeps them from sticking to each other and easier to eat.
This recipe can also be pressed into a 9 inch square dish and sprinkled with coconut. Then refrigerate for at least an hour.
Store in the refrigerator. (if they last that long)

Certified Gourmet Raw Food Chef

I am so excited I can hardly stand it! I just finished my certification to be a raw food chef.  What does that mean exactly? That means I've learned some awesome recipes and techniques, that will enable me to make more nutritious meals for my family and others. Oh and by the way, it doesn't mean we use raw meat. Just raw vegetables, fruit, grains and seeds.  This way of preparing food enables me to retain the full nutrient value, while still pleasing the pallet!  I will post some ideas and tips to help you as well.  This certification also means that I have more education behind me so I can share this passion with others. I can't wait to see where this new journey leads me. I am so very thankful that I am not alone in this journey and that I have been blessed with a few other dear friends that share my passion.
I don't eat all raw food at present, and I am not sure I will ever be 100% raw, but a good goal would be 75 to 85% raw food.  I will give you the reasons I feel why it is a good goal in the next few posts.

Happy Valentines Day!

Well here we are, Valentines day. Wow, how did we get half way through February already? So, what did you prepare for dinner, or did you go out to eat?  Did you carefully plan healthy substitutes?
I had intended to make an all raw gourmet meal, but I didn't plan ahead enough, so I did something totally different.  I will tell you that I made one of my all time favorite cakes, and there wasn't a bit of chocolate in it!  I made carrot cake, and it turned out delish!  I don't like to use all the oil, and sugar. So I use honey, and use a third the sugar that is called for, and it was still very good. I use organic flour, raw honey, organic carrots and farm fresh eggs. I used my vita mix blender to ready the carrots. Probably not the best idea considering it turned them into baby food. Not as much texture in the cake, but the taste was divine. I think next time I will use shredded non sweetened coconut as well. You can just use your favorite recipe, and tweek it to a healthier version. I am not the best baker, and I tweeked this recipe, and it turned out great. Keep your measurements accurate, and don't be tied to the recipe. Own it, make it all yours. Take some of your favorite dishes, and re-vamp them. Then share them with all of us. (if they turned out good) Now remember, you can have special occasion treats and you can make healthier choices. It is just a matter of a little effort.
